PAVLOVA

4 egg whites (make sure no yolk is added)
1 cup caster sugar (slightly finer than granulated sugar but not as fine as powdered sugar)
1 teaspoon vanilla essence
1 teaspoon vinegar
1 tablespoon cornstarch


METHOD

Beat egg whites at room temperature until stiff and forming peaks. Beat in sugar, then vinegar and vanilla essence. Lastly beat in sieved cornstarch.
Place on round baking sheet covered in foil.
Cook in oven at 150/300 for 45-50 minutes until
golden and crispy on top.
Turn over onto plate for serving
and peel off foil.

TO DECORATE:

fresh cream
fresh or tinned strawberries
chocolate flakes

Cover pavlova with fresh cream. Add chocolate, then fruit.

This recipe is versatile with toppings and really you can use the fruit of your choice - fresh or tinned or add chopped nuts. I didn't have strawberries when I made this one so used tinned oranges.

Baked Potato Soup...

5 Lrg baking potatoes
1/4 c. butter
1/2 c. flour
7 c. milk
1 bunch of green onions, chopped
1/2 lb bacon, fried crisp and crumbled.
1 1/2 c. cheddar cheese, shredded
1 c. sour cream
salt and pepper to taste


Bake potatoes until tender, cool, peel and chop into small pieces. Melt butter in 5-quart pot and stir in flour.Slowly whisk in milk over medium heat; bring to almost boiling. Add potatoes,onion and bacon. Stir in cheese and sour cream. Heat through until cheese is melted and soup is warm...This is a good soup...
BROWNIES In A Jar

Ingredients
2 1/4 cups white sugar
2/3 cup unsweetened cocoa powder
1/2 cup chopped pecans
1 1/4 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon salt


Directions
Mix together flour, baking powder, and salt. Set aside.

Layer ingredients in a 1 quart "wide mouth" canning jar. Press each layer
firmly in place before adding the flour mixture. NOTE: Be sure to wipe out
the inside of the jar with a dry paper towel after adding the cocoa powder.

Instructions to attach to jar:

Brownie Mix in a Jar II
Empty jar of brownie mix into a large mixing bowl. Use your hands to
thoroughly blend mix.
Add 3/4 cup butter or margarine melted. DO NOT USE DIET MARGARINE. Add 4
eggs, slightly
beaten.
Mix until completely blended.
Spread batter into a sprayed 9 x 13 inch baking pan.
Bake at 350 degrees F (175 degrees C) for 30 minutes.
Cool completely in pan.
Cut into 2 inch squares.
Makes 2 dozen Brownies.

Quick Quiche

3 slices bacon, cooked and crumbled
1 c. grated cheese
1/2 c. chopped onions
4 eggs
2 c. milk
1/2 c. biscuit baking mix
1/2 t. salt
dash pepper

Grease a pie plate or pan; sprinkle bacon,
cheese, and
onions over bottom. 

Beat eggs and milk together;
add remaining ingredients and beat until well mixed. 

Pour
into pie plate and bake in 350F for 50-55 minutes.

(A knife inserted in the center of the quiche will comeout clean when quiche is done.)

Let stand 5-10 minutes
before cutting and serving

Ingredients:
1 box Jello
1 cup boiling water
2 cups cold milk
(If you are dieting  or Diabetic you can use skim milk and sugar-free Jello)
Boil 1 cup water in microwave.
Add pckg. of Jello and stir until completely dissolved
Let stand for 1 hour
After 1 hr. is up add 2 cups of cold milk and stir well.
NOW COMES THE FUN!!!

Add whatever you like.
I like to use mandarin oranges  and mini
marshmallows with orange Jello

Mary said... she used lemon Jello and fresh blueberries.

I used a mixture of blackberries/raspberries& blueberries
with cherry Jello when Gail and Richard came to visit us.

Canned fruit that is drained works well too.

Fresh strawberries.... Ummmm

Use your imagination! : )

No onions please. Heeee heee just kidding!

Note: I have found that this sets up better if you put it in individual dessert cups or bowls. I use little glass custard dishes. It works in a big bowl but just doesn't seem as nice to me.
